The specification applies to fresh or cooked sausages such as breakfast sausages, pork sausages, wieners, frankfurters, knockwurst, bratwurst, liverwurst and bologna. It is intended to be used by food services in the procurement of food.
This specification does not apply to fermented or dried sausages (e.g., salami, pepperoni, mortadella, etc.).
