Blast freezers are available in two types: static and dynamic. Static freezers are arranged to freeze boxed product on pallets or on a rack with wheels. The dynamic freezer conveys racks or pallets through the freezing tunnal on hydraulically driven conveyors at a predetermined rate. Each type has similar design criteria. Many boxed products are frozen in static blast freezers (sometimes called batch freezers). When considering installed cost only, blast freezers are the least expensive way to provide a quality product. Unfortunately, many so-called blast freezers are improperly designed and operated. Most of the operation problems are related to improper positioning of the pallet or cart in the freezer.
