The convective film coefficient and mass transfer of water vapor from to a commodity the surrounding air are influenced by atmospheric pressure. This causes evaporative cooling to be the dominant mode of heat transfer under hypobaric conditions and creates a dilemma in water conservation for stored plant products. Can they dispel their respiratory heat and remain cold without drying excessive- ly, or does water loss ultimately limit storage? A nodal model for heat transfer is used to analyze this problem.
