The purpose of this paper is to discuss Hazard Analysis Critical Control Point (HACCP); what exactly is HACCP and what does it mean to the dairy processor especially in relationship to pasteurization as a critical control point. In addition, the ISO 9000 compliance standards will be discussed. What exactly are these, what does certification mean and where does it fit in relationship to HACCP.
