The development of modified atmosphere packages for fresh chilled foods requires knowledge of a variety of subjects polymer science, packaging machinery, food science, microbiology, distribution conditions and market expectations. The diversity of information and factors necessary for the development of MAP can be daunting to many companies. A systematic analysis of the food product and its interactions with package gases, as well as knowledge of the performance capabilities of available packaging materials can serve as an analytical basis for package development.
